Instant Pot Cheesy Cauliflower Mash

Ingredients
  • 1 small head cauliflower, cut into florets
  • 2 lbs. Yukon gold potatoes, peeled and cut into large chunks
  • 1 cup chicken or vegetable broth
  • 3 tbsp. butter
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • ¾ cup shredded cheddar cheese
  • ¼ cup shredded parmesan cheese
  • Fresh chives for topping, optional
Instructions
  1. To your instant pot, add cauliflower, potatoes, broth, butter, salt, pepper, garlic powder, and onion powder.
  2. Place the lid on the instant pot and ensure it's sealed. Set to high pressure for 4 minutes.
  3. Once its done cooking, manually release the pressure.
  4. Use a potato masher to mash the cauliflower and potatoes. They should be very tender and this should not take long! If you want them to be really smooth, you can use a hand mixer.
  5. Stir in the cheddar and parmesan cheeses.
  6. Serve topped with snipped chives.
  7. Enjoy!
