I love a quick and healthy lunch, and something that I can make in advance is even better. When you’re making a salad loaded with lettuces and spring greens, your leftovers won’t keep well. But with a grain bowl like this Greek chickpea and couscous version, you can make enough for a few days in a row. This recipe is so filling and delicious and packed with vegetables for an easy lunch you’ll find yourself wanting to make again and again. With delicious ingredients and a simple vinaigrette, you have a lunch recipe that you can throw together in a few minutes.
The two main ingredients in this easy grain bowl recipe that will keep you full are chickpeas and couscous. If you don’t like couscous or don’t have it on hand, you can substitute farro or another grain of choice. I really think chickpeas are the best protein choice in this recipe, but you could always use cooked shredded chicken or another bean if you want. The couscous will clump together if you don’t add the dressing soon after cooking, so keep that in mind when you’re prepping the rest of the ingredients. While your couscous (or other grain of choice) is cooking, chop your tomatoes, peppers, and cucumbers. Toss the vegetables with the chickpeas and couscous and add the feta and simple red wine vinaigrette and your recipe is good to go!
This recipe makes two full meal-sized servings for a hearty lunch, and if you’re serving it as a side dish it will serve about six adults. I know summer is still a ways away, but this would also work well paired as a summer side for any grilled protein. Save this recipe for just about any occasion!
- 1½ cups cooked couscous
- 1 can chickpeas, rinsed and drained
- 1 pint grape tomatoes, halved
- 1 Persian or English cucumber, chopped
- 2 cups sliced mini sweet peppers
- ½ cup crumbled feta cheese
- 3 tbsp. olive oil
- 3 tbsp. red wine vinegar
- ½ tsp. salt + more to taste
- ½ tsp. freshly ground black pepper + more to taste
- ½ tsp. garlic powder
- 2 tsp. dried oregano
- In a large bowl, place couscous, chickpeas, tomatoes, cucumber, and peppers.
- In a small bowl whisk together olive oil, red wine vinegar, salt, pepper, garlic powder, and oregano.
- Pour the dressing over the couscous mixture and mix to combine.
- Top with crumbled feta and mix to combine.
