When it comes to Easter side dishes, I want something with potatoes, something orange, and something green. For our orange this year, we’re having maple bourbon glazed carrots. Last year for something green we had cheesy asparagus, but this year we are going to enjoy these garlic butter green beans! They’re roasted with garlic butter and topped with toasted almonds and parmesan cheese. It’s a simple combination of flavors, but sometimes simple is best.
I don’t get overwhelmed when cooking for the holidays. This year it will just be our little family of five celebrating, but even when we host family or friend, I find it so fun and love to cook for others. I find that two things are key. One: make as much as you can in advance. I’m usually more tired the day before a holiday than I am on the holiday itself! The day before Thanksgiving is such a busy cooking day for me, but the day of the holiday I’m just popping side dishes in the oven and keeping an eye on my turkey. My recommendation is definitely to stick with that! Even though most of us are going to be enjoying the holiday with just immediate family, you still don’t want the day to be stressful.
These garlic butter green beans are an easy side dish that you’ll enjoy for Easter, but really it’s one to enjoy anytime. I find myself snacking on these straight from the pan!
- 2 lbs. fresh green beans, ends trimmed
- 4 tbsp. butter
- 5 cloves garlic, minced
- 1 tsp. salt
- ½ tsp. freshly ground black pepper
- ½ cup sliced almonds
- ½ cup parmesan cheese
- Bring a large pot of water to a boil. You're going to blanch the green beans! If you've never done that the process is simple. You place the green beans in a pot of boiling water for 1-2 minutes, then transfer them to a bowl with ice water. This helps the green beans stay bright in color and starts the cooking process. You may need to work in batches depending on the size of the pot. Once all the beans are blanched and cooled, transfer to a towel and dry completely.
- Preheat oven to 375 degrees Fahrenheit.
- In a small saucepan, melt butter. Add garlic and cook for just a few minutes until fragrant.
- Place the blanched adn dried green beans on a rimmed baking sheet. Drizzle with the garlic butter then sprinkle with salt and pepper and toss to combine. Top with sliced almonds.
- Bake for 15 minutes until green beans are crisp-tender. For the last few minutes of cooking time, add the cheese to melt.
- Serve immediately. Enjoy!
