Garlic Butter Roasted Green Beans with Almonds

Ingredients
  • 2 lbs. fresh green beans, ends trimmed
  • 4 tbsp. butter
  • 5 cloves garlic, minced
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper
  • ½ cup sliced almonds
  • ½ cup parmesan cheese
Instructions
  1. Bring a large pot of water to a boil. You're going to blanch the green beans! If you've never done that the process is simple. You place the green beans in a pot of boiling water for 1-2 minutes, then transfer them to a bowl with ice water. This helps the green beans stay bright in color and starts the cooking process. You may need to work in batches depending on the size of the pot. Once all the beans are blanched and cooled, transfer to a towel and dry completely.
  2. Preheat oven to 375 degrees Fahrenheit.
  3. In a small saucepan, melt butter. Add garlic and cook for just a few minutes until fragrant.
  4. Place the blanched adn dried green beans on a rimmed baking sheet. Drizzle with the garlic butter then sprinkle with salt and pepper and toss to combine. Top with sliced almonds.
  5. Bake for 15 minutes until green beans are crisp-tender. For the last few minutes of cooking time, add the cheese to melt.
  6. Serve immediately. Enjoy!
