Peaches get a lot of love when it comes to cobbler in the summer, as they should! Peaches are one of my favorite seasonal produce items of summer. But one of the things that I love about fruit desserts like cobbler, is that you can substitute another fruit fairly easily, and when cherries are also in season you just can’t beat this easy cherry cobbler recipe. I know pies are also a delicous way to use summer fruit in a dessert, but I rarely have the patience for pie crust. I love the way that a pretty pie looks but no matter what I try, my pie crust just never turns out as well. Topped with a big scoop of vanilla ice cream, this easy summer dessert is the way to go, and much less time consuming than pie.
The filling of this cherry cobbler is simple: cherries, sugar, and a little bit of lemon juice. The topping is just as easy! In fact, I think you’ll find that the topping reminds you of a sugar cookie. Sometimes I make desserts that are healthier and naturally sweetened, but for this fruit cobbler recipe, I’m using butter and sugar. I promise that it’s worth it! The ingredients for the filling are combined together until they have the consistency of wet sand, then sprinkled over the cherries. For this recipe you can use an 8 x 8 or 9 x 9 square baking dish, individual baking dishes, or even an oval or round baking dish. As long as you can fit everything without overflowing the pan, you can use whatever baking dish you have.
For years, I didn’t own a cherry pitter. I would painstakingly halve the cherries individually, then remove the pit. This year I bought a cherry pitter and it is made my life so much easier! There are so many different cherry pitters and some even pit multiple cherries at a time, but this $13 find online works great for me. If you don’t have one in your kitchen, even if you only need it a few times a year, I think it’s worth it to have one because it does save so much time and red-stained fingers. I may even make some cherry jam soon now that I have an easy way to remove the pits!
This cherry cobbler recipe is definitely my new go-to summer dessert, and I hope it becomes yours too!
- 6 cups whole pitted cherries
- ¼ cup granulated sugar
- Juice of ½ a lemon
- ½ cup granulated sugar
- ¼ cup packed brown sugar
- 1 cup all-purpose flour
- 1 tsp. baking powder
- ⅛ tsp. salt
- ½ cup melted and cooled butter
- 1 tsp. almond extract
- Vanilla ice cream for topping, optional
- Preheat oven to 350 degrees Fahrenheit.
- Place cherries in a large bowl. Sprinkle with sugar and add lemon juice and stir to combine.
- In a medium bowl, make the topping. Whisk together granulated sugar, brown sugar, flour, baking powder, and salt. Pour in melted butter and almond extract and mix to combine. The mixture will be the consistency of wet sand.
- Pour your filling into your desired baking dish. You can use an 8x8, 9x9, round baking dish, or individual baking dishes. As long as the cobbler does not overfill the dish, you can use anything you like.
- Sprinkle the topping onto to the filling.
- Bake for 25-30 minutes until topping is golden brown and cobbler is bubbling.
- Serve topped with vanilla ice cream.
