Easy Cherry Cobbler

Ingredients
Filling
  • 6 cups whole pitted cherries
  • ¼ cup granulated sugar
  • Juice of ½ a lemon
Topping
  • ½ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • ⅛ tsp. salt
  • ½ cup melted and cooled butter
  • 1 tsp. almond extract
  • Vanilla ice cream for topping, optional
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Place cherries in a large bowl. Sprinkle with sugar and add lemon juice and stir to combine.
  3. In a medium bowl, make the topping. Whisk together granulated sugar, brown sugar, flour, baking powder, and salt. Pour in melted butter and almond extract and mix to combine. The mixture will be the consistency of wet sand.
  4. Pour your filling into your desired baking dish. You can use an 8x8, 9x9, round baking dish, or individual baking dishes. As long as the cobbler does not overfill the dish, you can use anything you like.
  5. Sprinkle the topping onto to the filling.
  6. Bake for 25-30 minutes until topping is golden brown and cobbler is bubbling.
  7. Serve topped with vanilla ice cream.
  8. Enjoy!
