When you’re cooking a big meal for a holiday or when entertaining, you want to have an appetizer that everyone loves, but it needs to be easy. We need minimal prep, but something that everyone will love. This cranberry brie puff pastry is just what you need! Make it for Christmas, New Years, or any other get together this holiday season. Creamy brie is topped with cranberry sauce and fresh thyme and tucked into a puff pastry and baked until golden. Serve with your favorite crackers and watch it disappear! The sweet tangy cranberries are the perfect pair with creamy brie and puff pastry, and this stunning dish will impress anyone you serve it to.

Ingredients for Cranberry Brie Puff Pastry

  • Puff pastry: puff pastry is one thing that I’ll never try to make at home. Buy it store bought to keep this as easy as possible.
  • Brie: Pick your favorite from your local grocery store. It doesn’t need to be expensive!
  • Cranberry sauce: If you have a favorite cranberry sauce recipe, I recommend using that. If you don’t have a cranberry sauce you love, just make a simple one at home with fresh cranberries, orange juice, and brown sugar.
  • Fresh thyme: The herbaceous flavor from the thyme is just what this appetizer needs.
  • Egg: A simple egg wash gives the puff pastry the crispy golden crust.
  • Salt and pepper: I like to use flakey salt and freshly cracked black pepper on top to finish this easy appetizer.
  • Crackers for serving!

How to Make Cranberry Brie Puffed Pastry

  • This recipe is as easy as they come! If you don’t have your cranberry sauce pre-made, make it first.
  • Take your puff pastry out of the refrigerator where it has thawed and roll it out a little more. The standard sheet as you take it out won’t be quite big enough to wrap around the brie, so we need to roll it a little thinner.
  • Place the brie in the center of the puff pastry square and top with cranberry sauce. Sprinkle with fresh thyme, then working in a circle wrap up the brie. Transfer to a rimmed baking sheet sprayed with nonstick cooking spray.
  • Beat the egg in a small bowl and brush over the puff pastry. Sprinkle with flakey salt and freshly ground black pepper.
  • Bake for 30-40 minutes until the top is golden brown. Serve warm with crackers!

This recipe is foolproof and an easy one to make when entertaining or to bring to enjoy with friends! Who doesn’t love warm creamy brie and a glass of wine while surrounded by friends?

Cranberry Puff Pastry Brie

This easy appetizer is the perfect one to make when entertaining over the holidays.
Ingredients
  • 1 sheet puff pastry
  • 1 8-9 oz. wheel of brie
  • ½ - ¾ cranberry sauce*
  • Fresh thyme
  • 1 egg
  • Flakey salt
  • Freshly ground black pepper
  • Crackers for serving
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Set the puff pastry on a lightly floured surface and roll until it's 2 inches wider on all sides.
  3. Place the brie in the center of the puff pastry and spoon cranberry sauce over it. Top with fresh thyme.
  4. Moving in a circle around the brie, wrap the puff pastry up and over the cheese.
  5. Transfer to a rimmed baking sheet lined with foil, then brush with beaten egg and sprinkle with flakey sea salt and freshly ground black pepper.
  6. Bake for 30-40 minutes until the top is golden brown.
  7. Serve warm with crackers.
Notes
*You can use any fresh cranberry sauce recipe that you like! If you don't have one, combine 2 cups of fresh cranberries, ½ cup of orange juice, and 2 tbsp. of brown sugar in a small saucepan on the stove. Cook until all the cranberries have broken down, adding more orange juice if needed.

I love seeing your interests as you get older and watch you lean into the things that make you YOU. You’re an excellent big brother and are always looking out for your siblings and will happily stop what you’re doing to play cars with Killian, built an elaborate train track setup, or read him his bedtime story. 

There is just something about your oldest. We’ve been on this journey together for 11 years since you made us parents in the middle of the night. We’ve grown and learned together since day one and seeing the kind, smart, empathetic, independent, wonderful young man you are now is one of my greatest joys. Happy birthday bug. 💙

I took the kids on one last 2025 adventure to a wi I took the kids on one last 2025 adventure to a winter wonderland ❄️. Our day was filled with laughter and joy, snowball fights and hot chocolate. As this year ends I can almost taste the season that’s next, as 2026 brings the start of middle school for our oldest and preschool for our youngest (how?!). But if I’ve learned anything it’s that every season and every year I’m blessed enough to parent these kids and enjoy the life Kevin and I have built together, it’s always good. Cheers to another year my friends! I already have things I’m excited about in 2026: family adventures, racing in the mountains, a lot of quality time with those I love most, and maybe even some good recipes to come.
