Ingredients for Cranberry Brie Puff Pastry
- Puff pastry: puff pastry is one thing that I’ll never try to make at home. Buy it store bought to keep this as easy as possible.
- Brie: Pick your favorite from your local grocery store. It doesn’t need to be expensive!
- Cranberry sauce: If you have a favorite cranberry sauce recipe, I recommend using that. If you don’t have a cranberry sauce you love, just make a simple one at home with fresh cranberries, orange juice, and brown sugar.
- Fresh thyme: The herbaceous flavor from the thyme is just what this appetizer needs.
- Egg: A simple egg wash gives the puff pastry the crispy golden crust.
- Salt and pepper: I like to use flakey salt and freshly cracked black pepper on top to finish this easy appetizer.
- Crackers for serving!

How to Make Cranberry Brie Puffed Pastry
- This recipe is as easy as they come! If you don’t have your cranberry sauce pre-made, make it first.
- Take your puff pastry out of the refrigerator where it has thawed and roll it out a little more. The standard sheet as you take it out won’t be quite big enough to wrap around the brie, so we need to roll it a little thinner.
- Place the brie in the center of the puff pastry square and top with cranberry sauce. Sprinkle with fresh thyme, then working in a circle wrap up the brie. Transfer to a rimmed baking sheet sprayed with nonstick cooking spray.
- Beat the egg in a small bowl and brush over the puff pastry. Sprinkle with flakey salt and freshly ground black pepper.
- Bake for 30-40 minutes until the top is golden brown. Serve warm with crackers!

- 1 sheet puff pastry
- 1 8-9 oz. wheel of brie
- ½ - ¾ cranberry sauce*
- Fresh thyme
- 1 egg
- Flakey salt
- Freshly ground black pepper

- Preheat oven to 350 degrees Fahrenheit.
- Set the puff pastry on a lightly floured surface and roll until it's 2 inches wider on all sides.
- Place the brie in the center of the puff pastry and spoon cranberry sauce over it. Top with fresh thyme.
- Moving in a circle around the brie, wrap the puff pastry up and over the cheese.
- Transfer to a rimmed baking sheet lined with foil, then brush with beaten egg and sprinkle with flakey sea salt and freshly ground black pepper.
- Bake for 30-40 minutes until the top is golden brown.
- Serve warm with crackers.
