This is a busy time of year. Maybe you’re still enjoying summer vacation, or maybe the school year has started and you’re dealing with the craziness of that schedule change. Maybe you’re busy at your job. I don’t think I understood that it was possible to be “too busy to eat” until I had kids. But now, before I know it I’m starving and it’s easy to reach for a less-than-healthy snack option. Especially being 31 weeks pregnant, I find that I can’t make it from one meal to the next without eating something. Keeping healthy snack options on hand like these cookie dough energy bites are the solution!
Energy balls could not be easier to make. A few healthy ingredients mixed in one bowl, rolled into balls, and kept in you refrigerator for whenever you need a snack. I’ve packed these as snacks when the boys and I are enjoying a morning activity, had them as an afternoon snack, and even eaten them at night when I’m craving something sweet. They are so easy, and with the oats and flaxseed meal being great foods for breastfeeding mamas, I can see myself enjoying these a lot in my postpartum phase as well.
But you don’t need to be pregnant or breastfeeding to enjoy these. The natural boost of energy that you get will help ward of the 3pm slump, and the protein from the peanut butter will help keep you full until your next meal. My kids and husband all love these and I plan to send them in Kevin’s lunch when I know he’s going to have a particularly long day at work.
Quick, healthy, and a snack the whole family will enjoy? Sounds like a win to me.
- 1 c. rolled oats
- ½ cup chocolate chips
- ½ cup finely shredded unsweetened coconut
- 3 tbsp. chia seeds
- ¼ cup flaxseed meal
- ½ cup natural peanut butter (or any nut butter)
- ¼ cup honey
- In a medium bowl, mix together oats, chocolate chips, coconut, chia seeds, and flaxseed meal.
- Add peanut butter and honey and mix again.
- Form mixture into balls and place in a covered container. Refrigerate and enjoy anytime!
