Have you ever tried chia pudding? I tried chia pudding for the first time a few years ago and was pleasantly surprised. It’s not as smooth as traditional pudding because the chia seeds add a bit of a crunch, but it is just as delicious! I keep this as healthy as I can, using unsweetened almond milk to keep it dairy-free and honey for sweetness. If you’re vegan, you can substitute pure maple syrup for honey for a natural sweetener that’s just as delicious!
Chia seeds may not look like much, but they are so good for you! I’m always putting them in smoothies or sprinkling them on top of yogurt to reap their health benefits. High in fiber, omega-3 fatty acids, and micronutrients, they make a delicious dessert that’s completely guilt-free. This chocolate chia pudding is also great with a creamy topping. Coconut whipped cream is perfect if you’re vegan, and a swirl of Greek yogurt is great if you’re not. I think this is even healthy enough to enjoy for breakfast! I made this with vanilla and a little bit of cinnamon, but you can also add a little pinch of cayenne if you’re looking for more of a Mexican chocolate vibe.

- ¼ cup cocoa powder
- 4-5 tbsp. honey (substitute pure maple syrup if vegan)
- Pinch of salt
- ¼ tsp. cinnamon
- ½ tsp. vanilla extract
- 1½ cups unsweetened almond milk
- ½ cup chia seeds
- Fresh berries for topping
- Coconut whipped cream, whipped cream, or Greek yogurt for topping
- Place the cocoa powder, honey (or pure maple syrup if using), salt, cinnamon, vanilla, and almond milk in a blender and mix until smooth.
- Put the chia seeds in a medium bowl and pour the cocoa mixture over it. Whisk to combine.
- The chia pudding needs to set in the refrigerator for 8 hours or overnight and should be whisked every few hours. If you're letting it set overnight, just whisk it before you go to bed and first thing in the morning.
- Serve topped with Greek yogurt, whipped cream, or coconut cream and fresh berries.
