Chocolate Chia Pudding

Ingredients
  • ¼ cup cocoa powder
  • 4-5 tbsp. honey (substitute pure maple syrup if vegan)
  • Pinch of salt
  • ¼ tsp. cinnamon
  • ½ tsp. vanilla extract
  • 1½ cups unsweetened almond milk
  • ½ cup chia seeds
  • Fresh berries for topping
  • Coconut whipped cream, whipped cream, or Greek yogurt for topping
Instructions
  1. Place the cocoa powder, honey (or pure maple syrup if using), salt, cinnamon, vanilla, and almond milk in a blender and mix until smooth.
  2. Put the chia seeds in a medium bowl and pour the cocoa mixture over it. Whisk to combine.
  3. The chia pudding needs to set in the refrigerator for 8 hours or overnight and should be whisked every few hours. If you're letting it set overnight, just whisk it before you go to bed and first thing in the morning.
  4. Serve topped with Greek yogurt, whipped cream, or coconut cream and fresh berries.
