I love to have a salad for lunch, and this chipotle chicken salad is delicious on a sandwich or on a bed of salad greens. It’s creamy and just a little spicy thanks to the chipotle peppers, and being so easy to make means that I can whip it up for lunch on even the busiest days. For this chicken salad recipe, you can use pre-cooked shredded chicken leftover from any meal (or even shredded from a rotisserie chicken), or cook up a few chicken breasts and shred them yourselves. No matter how you prepare it, it’s a delicious lunch that you’re sure to make again.
Here’s what you need to make this chipotle chicken salad recipe:
- Cooked shredded chicken
- Mayo
- Plain Greek yogurt
- Green onions
- Chipotle peppers + some of the adobo sauce from the can
- Lime juice
- Salt and pepper
- Smoked paprika
If you don’t have any cooked shredded chicken ready to go, I like to cook some chicken breasts and thighs seasoned with salt, pepper, smoked paprika, garlic powder, onion powder, and chili powder. I rub that spice blend in with a little bit of olive oil and cook at 350 until they’re done. The smoky seasoning on the chicken definitely adds something extra to the chicken salad!
I love this chicken salad on an everything bagel piled high with sliced tomato, red onion, and sprouts. It’s also delicious wrapped in a tortilla with lettuce and tomato, with pickled red onions, or scooped onto a bowl of your favorite salad greens. There’s no wrong way to enjoy it!
- 2 cups cooked, shredded chicken
- ¼ cup mayo
- ¼ cup plain Greek yogurt
- 1 tbsp. adobo sauce (from can of chipotle peppers in adobo sauce)
- 1 chipotle pepper, finely chopped
- 4 green onions, sliced
- Juice of 1 lime
- ½ tsp. smoked paprika
- ½ tsp. salt
- ¼ tsp. black pepper
- In a bowl, mix together chicken with mayo, Greek yogurt, adobo sauce, chipotle pepper, green onion, lime juice, paprika, salt, and pepper.
- If you don't have cooked chicken ready to go, use my seasoning blend outlined in the blog post to cook your own chicken breasts.
- Mix until well combined, then enjoy on bread, a bagel, in a wrap, or on a salad!
