Chipotle Chicken Salad

Ingredients
  • 2 cups cooked, shredded chicken
  • ¼ cup mayo
  • ¼ cup plain Greek yogurt
  • 1 tbsp. adobo sauce (from can of chipotle peppers in adobo sauce)
  • 1 chipotle pepper, finely chopped
  • 4 green onions, sliced
  • Juice of 1 lime
  • ½ tsp. smoked paprika
  • ½ tsp. salt
  • ¼ tsp. black pepper
Instructions
  1. In a bowl, mix together chicken with mayo, Greek yogurt, adobo sauce, chipotle pepper, green onion, lime juice, paprika, salt, and pepper.
  2. If you don't have cooked chicken ready to go, use my seasoning blend outlined in the blog post to cook your own chicken breasts.
  3. Mix until well combined, then enjoy on bread, a bagel, in a wrap, or on a salad!
