Summertime calls for quick and easy dinners with minimal oven time, am I right? This salad is a spicy take on the classic chicken Caesar and so delicious. The homemade dressing is super easy and quick to whip up. I know that traditional caesar dressing calls for anchovy paste, but I left it out and found that the dressing doesn’t even need it! Most of the other ingredients for the dressing you may already have on hand, making it even easier to throw together. If anchovy paste is your jam and you can’t have Caesar salad without it, throw in a teaspoon or two.
Also, with two kids in tow while I grocery shop, I’m playing with fire if I decide to wander the aisles to find anchovy paste. But it’s a win for everyone! The dressing doesn’t need it, I had happy kids in the store, and you can make this delicious salad for dinner. Feel free to use store-bought or homemade croutons for this. I cubed up some stale bread and tossed it with olive oil, salt, pepper, and garlic powder and toasted it in the oven.
- 2 chicken breasts, cooked and shredded
- 2-3 heads of romaine lettuce*
- ½ cup buffalo sauce (I use Frank's Red Hot Buffalo)
- ¼ cup thinly sliced red onion
- 1 cup croutons
- blue cheese or gorgonzola cheese for topping
- 1 cup mayonnaise
- ½ cup finely grated parmesan cheese
- 2 tbsp. lemon juice
- 1 tsp. Worcestershire sauce
- 2 tbsp. dijon mustard
- ½ tsp. salt
- ¼ tsp. ground black pepper
- ½ tsp. garlic powder
- In a small bowl, whisk together mayonnaise, parmesan cheese, lemon juice, Worcestershire sauce, mustard, salt, pepper, and garlic powder. Set aside.
- Chop lettuce into bite-sized pieces.
- In a small bowl, toss shredded chicken with buffalo sauce.
- On two large plates or salad bowls, divide lettuce. Top with red onion, chicken, and croutons. Drizzle with dressing and top with gorgonzola or blue cheese.
