½ cup buffalo sauce (I use Frank's Red Hot Buffalo)
¼ cup thinly sliced red onion
1 cup croutons
blue cheese or gorgonzola cheese for topping
1 cup mayonnaise
½ cup finely grated parmesan cheese
2 tbsp. lemon juice
1 tsp. Worcestershire sauce
2 tbsp. dijon mustard
½ tsp. salt
¼ tsp. ground black pepper
½ tsp. garlic powder
Instructions
In a small bowl, whisk together mayonnaise, parmesan cheese, lemon juice, Worcestershire sauce, mustard, salt, pepper, and garlic powder. Set aside.
Chop lettuce into bite-sized pieces.
In a small bowl, toss shredded chicken with buffalo sauce.
On two large plates or salad bowls, divide lettuce. Top with red onion, chicken, and croutons. Drizzle with dressing and top with gorgonzola or blue cheese.
Notes
*I used three hearts of romaine. If you use full-sized heads of romaine lettuce you will only need 1-2.
