I love a good versatile baked good, especially around this time of year. Today I bring you a recipe for an apple cake that you can enjoy for breakfast, dessert, with an afternoon cup of tea as a snack, or really anytime! A friend of mine once told me that when she hosts guests staying in her home, she likes to have a snacking cake out in the kitchen for people to help themselves anytime. This coffee cake is perfect for that! The recipe uses both applesauce and chopped apples to double the apple flavor and lots of warm spices to make this cake perfect for fall. I baked it in a 9 x 13 baking pan, but you could also use a muffin tin to turn these into apple muffins!
This easy apple cake recipe comes together easily. First, mix together your dry ingredients in a medium bowl. Then, mix together your wet ingredients in a larger bowl. Add the dry ingredients to the wet ingredients and mix until just combined before you add your peeled and chopped apples. Spray a 9 x 13 baking pan with nonstick cooking spray and pour the batter into the prepared pan. Top with an easy streusel topping made with butter, granulated sugar, brown sugar, flour and cinnamon. Bake and enjoy all the fall delicious smells coming from your oven! I like to serve it topped with powdered sugar but it is optional if you want to dive right in! I like to warm up any leftover slices of cake in the microwave for maximum enjoyment with a cup of tea.

- 2½ cups all purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 2 tsp. cinnamon
- ½ tsp. nutmeg
- ½ tsp. ginger
- ½ tsp. allspice
- 1 cup vegetable oil
- ¾ cup granulated sugar
- ½ cup brown sugar
- 1 cup unsweetened applesauce
- 4 eggs
- 1 tsp. vanilla extract
- ½ tsp. almond extract
- 3 cups peeled and chopped apples
- ½ cup melted butter
- ¼ cup granulated sugar
- ½ cup all purpose flour
- ½ cup brown sugar
- 2 tsp. cinnamon
- Powdered sugar for topping, optional
- Preheat oven to 350 degrees Fahrenheit. Spray a 9 x 13 baking dish with nonstick cooking spray and line with parchment paper. Set aside.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice. Set aside.
- In a large bowl, whisk together oil, granulated sugar, and brown sugar until smooth. Add applesauce, eggs, vanilla extract, and almond extract. Add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the chopped apples and pour the batter into the prepared pan. In a small bowl prepare the streusel topping. Mix together the granulated sugar, flour, brown sugar, and cinnamon. Add the melted butter and mix until it's the consistency of wet sand. Sprinkle the streusel topping over the cake.
- Bake for 35-45 minutes until a toothpick inserted into the center comes out clean.
- Let cool completely in the pan before removing and serving. Top with powdered sugar if desired.
