Brown Sugar Cinnamon Apple Cake

Ingredients
Apple Cake
  • 2½ cups all purpose flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. ginger
  • ½ tsp. allspice
  • 1 cup vegetable oil
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 1 cup unsweetened applesauce
  • 4 eggs
  • 1 tsp. vanilla extract
  • ½ tsp. almond extract
  • 3 cups peeled and chopped apples
Streusel Topping
  • ½ cup melted butter
  • ¼ cup granulated sugar
  • ½ cup all purpose flour
  • ½ cup brown sugar
  • 2 tsp. cinnamon
  • Powdered sugar for topping, optional
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a 9 x 13 baking dish with nonstick cooking spray and line with parchment paper. Set aside.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice. Set aside.
  3. In a large bowl, whisk together oil, granulated sugar, and brown sugar until smooth. Add applesauce, eggs, vanilla extract, and almond extract. Add the dry ingredients to the wet ingredients and mix until just combined.
  4. Fold in the chopped apples and pour the batter into the prepared pan. In a small bowl prepare the streusel topping. Mix together the granulated sugar, flour, brown sugar, and cinnamon. Add the melted butter and mix until it's the consistency of wet sand. Sprinkle the streusel topping over the cake.
  5. Bake for 35-45 minutes until a toothpick inserted into the center comes out clean.
  6. Let cool completely in the pan before removing and serving. Top with powdered sugar if desired.
