With lettuce and tomato, a BLT is basically already a salad sandwich. Why not take that classic flavor combination and turn it into a BLT salad? Bacon, lettuce, and tomato, plus avocado added in and all drizzled with a bacon vinaigrette makes the perfect delicious salad. With tomatoes at their peak right now, this is the perfect salad recipe to make. I love having this for lunch, and you can feel free to add some shredded chicken or chickpeas if the bacon isn’t enough protein. It’s also a delicious salad to enjoy alongside your favorite burger.
With simple salads like this, the dressing really needs to be excellent. Saving a few tablespoons of the bacon grease to use as a base for the dressing is the perfect way to do that. The salty flavor and tiny bacon bits add so much flavor to a simple vinaigrette. Balanced out with vinegar, lemon juice, and honey, it’s a dressing you’ll want to make again and again. Sometimes a simple but delicious salad is just the way to go!
This BLT salad is pretty perfect as is, but some bell pepper, cucumber, shredded carrots, or red cabbage are also great additions if you wanted to add any extra vegetables. I like all those ingredients here because they give you some extra crunch along with the bacon. The avocado in this salad is also a must. The creaminess of it is the perfect contrast to the bacon and is extra delicious with the bacon vinaigrette. This is a salad that’s great for any occasion and can easily be bulked up to make it a meal, or is perfect as a side salad as well.
- 1 head green leaf lettuce
- 1 pint cherry or grape tomatoes, halved
- 1 ripe avocado, cubed
- 8 slices bacon, chopped
- 2 tbsp. olive oil
- 4 tbsp. apple cider vinegar
- 1 tbsp. lemon juice
- 1 tbsp. honey
- ½ tsp. salt
- ½ tsp. freshly ground black pepper
- Cut the lettuce into bite sized pieces and place in a large salad bowl. Add the halved tomatoes and avocado.
- In a large skillet, brown the bacon, stirring frequently. When the bacon is fully cooked and crispy, remove it with a slotted spoon and transfer to a plate lined with paper towels.
- Reserve 2 tbsp. of the bacon grease and any remaining bits in the pan, discard the rest of the grease.
- To that same pan, add olive oil, vinegar, lemon juice, honey, salt, and pepper. Whisk well to combine.
- Drizzle the dressing over the salad and toss to combine. Serve immediately.
