BLT Salad

Ingredients
  • 1 head green leaf lettuce
  • 1 pint cherry or grape tomatoes, halved
  • 1 ripe avocado, cubed
  • 8 slices bacon, chopped
  • 2 tbsp. olive oil
  • 4 tbsp. apple cider vinegar
  • 1 tbsp. lemon juice
  • 1 tbsp. honey
  • ½ tsp. salt
  • ½ tsp. freshly ground black pepper
Instructions
  1. Cut the lettuce into bite sized pieces and place in a large salad bowl. Add the halved tomatoes and avocado.
  2. In a large skillet, brown the bacon, stirring frequently. When the bacon is fully cooked and crispy, remove it with a slotted spoon and transfer to a plate lined with paper towels.
  3. Reserve 2 tbsp. of the bacon grease and any remaining bits in the pan, discard the rest of the grease.
  4. To that same pan, add olive oil, vinegar, lemon juice, honey, salt, and pepper. Whisk well to combine.
  5. Drizzle the dressing over the salad and toss to combine. Serve immediately.
