I used to be a skeptic when it came to kale salads. Kale is a pretty tough, semi-bitter green and while I love it sautéed with olive oil, garlic, and lemon, I didn't know how it would work in a salad. The key with kale is massaging it with the dressing. At a bare minimum, you want to massage it with olive oil, but I always use my hands to get dressing on every bit of the kale. This helps the kale become more tender, and make sure you get some of the dressing's flavor in every bite. This ... continue reading...
Turkey Sloppy Joes
I don't know what it is about sloppy joe's, but there's something nostalgic about them. They're probably not a meal that a lot of people think to make often, but I highly encourage you to add these turkey sloppy joe's to your meal plan! They come together in about 20 minutes, and I would even say that they are reasonably healthy! I've used it for my crock pot BBQ meatballs and my BBQ shrimp and grits, but I think these BBQ bacon baked beans are my new favorite use for it. I used three different kinds of beans in this recipe: great northern beans (which are similar to navy beans), small red kidney beans, and butter beans. I love the way all the different beans look and taste ... continue reading...
Red, White, and Blue Muffins
Can you believe that it's almost July?! I've always enjoyed the Fourth of July because it's such a fun and laid-back holiday. Some holidays require a lot of food preparation (Thanksgiving), or have a lot of pressure to have amazing plans (New Years Eve). While I love cooking for all holidays, there's something so relaxing about throwing something on the grill and making a few side dishes while you and your loved ones hang out in the backyard. We're having a small group of friends over this year, ... continue reading...
