Summer's sweet corn doesn't require much to let it shine. Corn on the cob is one of my favorite things about summer; slathered with butter and sprinkled with salt is the perfect way to enjoy it. But corn's natural sweetness also pairs well with spicy jalapenos. I'm not a fan of a lot of spice in my food, and the amount used in this recipe gives the perfect amount of heat. These jalapeno corn fritters are a delicous side dish to enjoy all summer long, and you can also make them a ... continue reading...
Creamy Tomato Basil Dip
Tomatoes and basil are absolutely one of my favorite combinations of summer. A sweet, juicy tomato ripened on the vine combined with the flavor of basil is perfection. Cheese and balsamic vinegar are obvious additions as well, but I could eat just tomatoes and basil all day long. There's no such thing as too much basil in my garden, and I'm already planning to plant more next year. This creamy tomato basil dip is the perfect way to showcase summer produce in a crowd-pleasing appetizer. To ... continue reading...

When I realized I hadn't included a baked good with cornmeal in it since then, I knew it was time to bring you something else. Cornmeal adds such a great texture and flavor to these sweet potato cornmeal muffins. I also love how they toe the line between sweet and savory. They belong at your summer BBQ just as much as they belong on your ... continue reading...
Cheesecake Fruit Tart
I don't know what it is about tarts, but I can't get enough of them. Ever since I got a tart pan for Christmas this past year, I've been very into tart recipes of all types. You can fill a tart shell with chocolate, pudding, or a creamy cheesecake filling topped with berries like I did here. I have mentioned on the blog before that pies are my nemesis. While I enjoy eating them, I do not enjoy making them, especially the pie crust. No matter what I try, it's never perfect. Tarts seem like an ... continue reading...
