Even though I cannot wait for summer berries and melon, I'm deciding to take advantage of winter citrus season while it's here. My kids love clementines and oranges, and while I'm the only one in my house to like grapefruit, I keep it in the refrigerator at all times while it's in season. We can't forget about the humble lemon though! There are a lot of options out there for lemon poppyseed bread, but this one is my favorite. It has the perfect texture, and there's lemon zest, lemon extract, and ... continue reading...
Sheet Pan Maple Soy Salmon with Green Beans
I love a good sheet pan meal, but sometimes they just do not turn out. Maybe it's a sheet pan meal with chicken and potatoes, and the chicken comes out dry and the potatoes are undercooked. Cacio e Pepe Kale with Crispy Chickpeas
Does anyone remember a time when kale wasn't popular? It's not a vegetable that I grew up eating, but now I grow it in my garden and it's always in my refrigerator. It's quick to sauté with some olive oil, salt, pepper, and a squeeze of lemon juice, can be baked into chips, or made into salad. It's also a key ingredient in one of my favorite soups, Zuppa Toscana. One of my favorite ways to enjoy it is for breakfast sautéed with mushrooms and topped with a fried egg. I took that concept, added ... continue reading...
Butternut Squash and Cauliflower Soup
I'm back with new recipes! I took a few weeks off to recharge and it was absolutely necessary. Between the Ebook release in the fall and delivering tasty holiday content, I was pretty burnt out by the end of the year. Not to mention our days in the winter are really short and I felt like I had a hard time capturing quality photos. Now I have a little more light in the afternoon, and I feel refreshed and ready to bring you new content, like this creamy butternut squash and cauliflower ... continue reading...
