I haven't done a lot of experimenting with "fake meat" options sold in grocery stores. Since we aren't vegetarian or vegan, when we want to have meat, we do. This doesn't mean I don't want a meatless burger, but I'm much more likely to want a black bean or quinoa burger instead of one made from a fake meat product that I'm unfamiliar with. I'm sure there are some great products available out there, but I just haven't experimented and cooked with them enough to recommend a product! So when it ... continue reading...
Cacio e Pepe Kale with Crispy Chickpeas
Does anyone remember a time when kale wasn't popular? It's not a vegetable that I grew up eating, but now I grow it in my garden and it's always in my refrigerator. Based on the recent weather ... continue reading...
Instant Pot Spanish Rice
Instant pots are amazing for a lot of reasons. They make the best hard-boiled (or soft-boiled) eggs, perfectly cooked oatmeal, main dishes, and rice. With minimal prep time, this instant pot Spanish rice is the perfect easy side dish. It's great to serve alongside enchiladas, perfect for Taco Tuesday, and really amazing tucked into a burrito. Honestly, this Spanish rice would be delicous by itself! Serve it with some black beans, sliced avocado, and some homemade salsa and you've got ... continue reading...
