I've been sharing a lot of of mocktail recipes this summer and it has been so much fun! I have one more coming before the end of my pregnancy and then you can get excited for cocktail recipes! Watermelon season is in full swing, but since only two people in my house actually like watermelon, buying a whole fresh watermelon and eating it before it spoils is sometimes a challenge. Generally when I cut up a watermelon we eat about 2/3 of it fresh and I freeze the rest. But what to do with that ... continue reading...
Lentil Taquitos
Given that I'm in my final 6 weeks of pregnancy, lately I have found it's sometimes "easier" to cook dishes with meat in them instead of being creative with vegan and vegetarian options. I was committed to making something delicous and vegan, and came up with these lentil taquitos. They couldn't be easier to make, especially because they are baked in the oven and not fried. But then I tried the raspberry glazed old fashioned doughnut at a local doughnut shop and I was hooked. There was something about the combination of raspberries with an old fashioned doughnut that trumped my typical doughnut order. Don't get me wrong, I still love a chocolate doughnut, but when I go to this one particular doughnut shop (or make my own with this recipe), I go with the ... continue reading...

This recipe for Greek tortilla roll ups is what I like to call a "non recipe." It's meant to inspire you to create an easy meal, but the ingredient measurements can be adjusted as you see fit! We've been in a heat wave here in Washington state, and since we only see temperatures above 85 degrees a few times a summer and have no humidity, most people don't have air conditioning. But when temperatures hit 91 degrees, that feels HOT, and the last thing that I want to do is turn on the oven or stand ... continue reading...
