I posted a sneak peek of these chickpea cookie dough bites on my Instagram stories and got so many messages asking when the recipe would be here. Well, the wait is over because they are here! Chickpeas are such a versatile ingredient to keep in your pantry, and they are always in my pantry. Crispy chickpeas are perfect on salads, and of course chickpeas can be made into hummus, but did you know that chickpeas are also a great way to make a healthy dessert or snack? When blended to a ... continue reading...
Orange Madelines
A friend of mine gifted me a madeline pan a few years ago, and every time I use it I love being rewarded with these little treats. Madelines are so cute, but being a French pastry they can have a reputation for being difficult to make. After a little trial and error, I've found a method that works to create this buttery treat that's a combination of a cookie and a cake. You won't find a better little cookie for dipping in a cup of afternoon tea or coffee! I won't tell if you eat them for ... continue reading...
Lasagna Soup
As much as I'm excited for warmer weather, it does make me a little sad that it's the end of soup season. I'm so happy to bring you these BBQ tofu and veggie bowls because they will convert even the toughest tofu ... continue reading...
Parmesan Orzo with Mushrooms and Spinach
I always have pasta in my pantry. Typically also a jar of marinara sauce, some chicken sausage in my freezer, and a bunch of veggies in my fridge. Pasta is the great equalizer because everyone loves it (except my three year old currently), it's so easy to use up extra vegetables in it, and it's generally a pretty quick meal. That's why you see so many pasta recipes here on my blog! And while I almost always have some sort of meat on hand to add to pasta, like our favorite chicken sausage from ... continue reading...
