Scones are one of my favorite breakfasts. As a tea drinker, there's nothing better to pair with a hot cup of tea than a warm, freshly baked scone. Scones are quick enough to whip up the morning that we're going to eat them, but are also delicious prepared in advance and heated up just a little bit for that freshly baked feeling. With berries in season, I knew that a berry scone was in order. I've always loved adding cornmeal to baked goods for the flavor and texture, and cornmeal is a natural ... continue reading...
Burrito Stuffed Sweet Potatoes
I always try to eat a healthy lunch, but when I'm pregnant like I am now I try even harder. If I'm out having an adventure with the kids in the morning, it's easy to come home and have a lunch that's thrown together and could stand to be healthier. I love getting my protein from plant-based sources at least 50% of the time, and these burrit0-stuffed sweet potatoes are the perfect way to do that. Sourdough Muffins

This chickpea tabbouleh salad is a little extra filling thanks to the addition of chickpeas, but the flavor profile is the same. Tabbouleh uses a grain you may not be familiar with called bulgur. We make this recipe so much that I always have it on hand! Paired with summery ingredients like fresh tomatoes, cucumbers, and herbs, it's ... continue reading...
Pesto Chicken Meatballs and Pasta

I enjoy that basil in salads and make a big batch of pesto to put on just about everything. Pesto is delicious in pasta, but it's also delicious spooned over eggs, added as something extra to salads, or spread on sandwiches. Pesto also freezes well, and I love to keep it in my freezer to pull out in the winter for a taste of the freshness of ... continue reading...
