I love fruit in a salad. Tomatoes may be a natural pair for basil in a caprese salad, but I think peaches pair just as well. I absolutely love fresh basil, and it's subtle sweetness lends itself to be paired with fruit. I use the freshest summer peaches for my peach, prosciutto, and basil salad and now in this cucumber, peach, arugula salad. This salad has a tasty lemon-basil vinaigrette that would be delicious on any salad. The ingredients of this salad are perfect together: peaches, cucumber, ... continue reading...
Potato Salad with Bacon and Mustard
I haven't always been a big fan of potato salad. I don't care for the concept of cooking potatoes and then serving them cold with a mayonnaise-based dressing. I do like my bacon jalapeno gorgonzola potato salad because of all the other add-ins with it! But if I had to choose my favorite option to enjoy potatoes, they would be WARM. I also have a hard time scooping all that mayonnaise into the potato salad because I know I can come up with something more delicious (and maybe even healthier?). ... continue reading...
Summer Flank Steak
I always get a little nervous when I cook steak. When I'm cooking chicken, pork, or turkey, there's one internal temperature to hit. But for steak, it depends on how you like your steak served and that stresses me out. On top of that, Kevin grills an amazing steak and I get nervous serving steak to him. He grills steak every year for Mother's Day, and every year it's the best steak that I've had. Thankfully, flank steak is pretty forgiving and due to the cut of the meat, it's easy to sear in a ... continue reading...
Homemade Strawberry Ice Cream
I've said it here before, but I have a lot of love for my ice cream maker. While my homemade ice cream uses heavy cream and sugar and isn't exactly a health food, it's delicous, easy to make, and better than anything you'll buy at the grocery store. The chocolate mint ice cream that I shared a few months ago is my favorite flavor, but in a house full of fruity dessert loves, my kids (and husband) have been requesting homemade strawberry ice cream. With all the strawberries coming out of our ... continue reading...
Instant Pot Beef Stroganoff
I've been sharing a lot of summery meals lately, but sometimes when that summer storm hits, or you have an unexpectedly chilly day, or you just want something comforting, maybe you reach for a recipe like this cozy instant pot beef stroganoff. I love a good instant pot meal, and I've been sharing a lot lately. The meals that I share on the blog are reflective of how we're currently eating. At 30 weeks pregnant, I'm looking for easy dinners, both for now and to keep in my back pocket for recipes ... continue reading...
