This time of year is proving to be very busy for our family, with two boys playing baseball and still finishing out the school year. I love days when I can spent a lot of time in the kitchen cooking an elaborate meal, but more often than not I'm looking for a meal that's delicious but doesn't take a lot of time to cook. It also needs to be something healthy to fuel my family as we move from one activity to the next! This Thai basil beef is the perfect option. It's packed with veggies, makes ... continue reading...
Herb Gnocchi with Garlic Cream Sauce
If I'm at an Italian restaurant where gnocchi is served, there's about a 99% chance that I'm going to order it. Ravioli is a close second depending on the filling. Making homemade pasta can be time-consuming, but I find it therapeutic with an delicious reward for a little work. Also, making gnocchi doesn't require any type of special equipment! Potatoes make this pasta a little more forgiving, making gnocchi the perfect first pasta if you're interested in delving into the homemade pasta ... continue reading...
Corn, Potato, and Sausage Chowder
A few weeks ago, it was in the 80's every afternoon here in Washington. I was out of town for a weekend, came home, and suddenly it was fall! We had to turn the heat on, I was dusting off my rain boots, and I knew it was time to recipe test some soups for all of you. Now that the weather has cooled off, we'll be eating soups and stews at ... continue reading...
Kale Caesar Salad with Garlic Bread Croutons
This is the salad for people who say they don't like kale. For a long time, I only enjoyed kale if it was NOT in a salad. I loved and still love it sautéed with a little olive oil, garlic, and salt. I like to chop it up and add it to soups. I didn't think I would enjoy it in salads because it's tougher and more bitter than lettuce. Then I learned that you need to massage the dressing into the kale before tossing it with the rest of the salad to take away that toughness and bitterness. And ... continue reading...
Tomato Tart with Herbed Ricotta
Tomatoes might be my favorite produce of summer. I love summer berries, peaches, and sweet corn, but I'm not sure there's anything better than a vine-ripened summer tomato. This super easy dish is inspired by what I ate for breakfast every single day while I was deployed. I would wake up early to go to the gym, and then I would have a bagel with cream cheese and sliced tomato, sprinkled with salt and pepper, with a side of fruit. I also had a salad every day for lunch. I'm not sure what ... continue reading...
