Let's talk about po' boys. First off, they are delicious! A giant bun stuffed with some type of meat, usually fried, along with some lettuce and tomato and drizzled with a delicious sauce. Who can resist that? They hail from Louisiana and are traditionally made with shrimp. But Kevin is allergic to shellfish, and I decided to give another southern twist to an already southern dish: fried green tomatoes. I don't know who had the idea at first to fry green tomatoes. Maybe they thought that ... continue reading...
Corn and Tomato Salad with Chimichurri
Sometimes the best dishes are the most simple, especially in the summer when you can get the absolute best, juiciest tomatoes and sweetest corn. I wanted to write this post since many of you don't know how Kevin and I met, which was quite the whirlwind romance, and because we have had a lot of fun on weekend getaways and vacations on our previous anniversaries. Kevin and I met in July 2010 at Fort Leonard Wood, Missouri. At the time, we were both in the Army. I ... continue reading...
Cornmeal Cheddar Chive Waffles
Let me tell you, savory waffles are a revelation. The first time I was even exposed to a savory waffle was at Nero Belgian Waffle Bar in Vancouver, British Columbia. Kevin and I went to Vancouver a few years ago and fell in love with the city. After doing this hike, we had definitely earned a hearty breakfast and were committed to stuffing our faces with waffles. While I got a delicious waffle topped with ice cream and chocolate, Kevin got a savory waffle topped with a spicy tuna salad and ... continue reading...
