I remember the first time I tried curry. I saw this recipe by one of my favorite bloggers and was intrigued, so I picked up some curry paste and coconut milk on my next grocery shopping trip. Now curry paste and coconut milk are staples in our house. I don't make curry too spicy so Lleyton will still eat it, but the flavor from the curry, coconut milk, fresh ginger, and garlic is amazing. Curry is so easy! And you all know how excited I get about easy, delicious dinners. This is the first ... continue reading...
Watermelon Mint Lemonade
If there was ever a drink that screamed summer, this is probably it. I decided to plant mint in my garden this year, and if you've ever planted mint, you know that it takes over very quickly. The cute little plant I got at a local nursery quickly turned into a giant bush. There are probably some mojitos in my future. This lemonade is non-alcholic, but I have a feeling it would be delicious with some vodka or tequila added to it and topped with club soda. It's the most refreshing thing you ... continue reading...
Smoked Salmon Fettuccini
If there's one thing that I'm a fan of, it's easy dinners that taste way more complicated than they actually are. My shrimp pesto pasta is like that, and so is this smoked salmon fettuccini. This recipe has just eight ingredients, and that's including salt and pepper! I promise that if I can whip this up in about 20 minutes while both my kids were awake, you can get this on the table quickly too. Whether your curling up on the couch with a glass of wine to watch Netflix or sitting down to ... continue reading...
Pineapple Fried Rice
Whenever we get Chinese takeout and I get an entree with white rice on the side, I always upgrade to fried rice. Sometimes I just get fried rice instead of an entree, because it's just that good! This homemade fried rice makes a large batch, so you can enjoy it as a side dish or main dish and still have leftovers for lunch tomorrow. No sad desk lunch for you, my friend! Our toddler, Lleyton, was initially skeptical of edamame. For some reason we started calling them "jumping beans" and ... continue reading...
Canned Whole Peeled Tomatoes
I'm back at it with home canning! I absolutely love having home-canned tomatoes on hand. I pick up a 25 lb. box at our local farmstand, spend an evening canning them because it's just too darn hot to do that during nap time, and enjoy them all winter long. They're delicious made into marinara sauce or salsa, crushed over pizza, or added to just about any dish for a hint of summer when the only tomatoes you can get are a suspicious shade of pink at the grocery store. Last summer I was pregnant ... continue reading...
