One classic comfort food combination that I'll never get tired of is grilled cheese and tomato soup. They are just meant to be! And the great thing about tomato soup that it's versatile and easy to add extra veggies. In the fall, I like to add butternut squash in my butternut squash tomato soup. But now as we approach spring, I want to make it bright and fresh, which is why I love this roasted red pepper soup! This will not be the first recipe for roasted red pepper soup on the internet, but I'm ... continue reading...
Sourdough Pretzel Bites with Beer Cheese Dip
The Superbowl is this Sunday and while I don't care at all about football, I do love a good game day snack! The only football game I really pay attention to every year is the Army/Navy football game. Other than the Olympics every four years, I don't watch other sports on TV. You can usually fine me with my head in a book when sports are on at our house. What is more festive for a game day than some beer cheese dip and pretzel bites for dipping? These sourdough pretzel bites are my first actual ... continue reading...
Lemon Bar Chia Pudding
One thing I've noticed that's made a hugely positive impact on my health is increasing the protein and fiber in my diet. I wake up hours before my ... continue reading...
Creamy Wild Rice and Mushroom Soup
Over the next few days we are going to have the coldest weather we've had all winter, which means I plan to make lots of cozy soups. Growing up in Chicago and going to college in New York, I'm unphased by winter weather. That being said, we have five kids now so I need to keep them entertained in all kinds of weather! Typically I fall into the camp of belief that there is no such thing as bad weather just bad clothing, but with an 8 month old I do need to be aware of those chillier temps. We ... continue reading...
Kale and Brussels Salad with Bacon
Oh how I love a good hearty salad! And while I love a mixed green salad, sometimes if you're entertaining you want a salad that holds up longer with a good dressing. For those times, I like a kale salad or brussels sprouts salad. And this salad is delicious at any temperature! I wish I had this recipe up on the blog before Christmas, but life with five kids over the holidays, birthdays for two of our kids, and a stomach bug that took the whole family down meant that some of the holiday recipes I ... continue reading...
