My kids go through phases with bananas and I never know what the week will bring. Sometimes they each want a banana every single day (and we have four kids!), and sometimes they don’t want any of them. That means that at the end of the week I may have a lot of ripe bananas! Between my healthy chocolate chunk banana bread recipe, smoothies, and this banana bread baked oatmeal, we always have a way to use up ripe bananas. I love making a cozy baked oatmeal for breakfast because I can quickly whip it up after I’m done working out in the morning and by the time it comes out of the oven I’m showered and ready for my day! Using simple ingredients that you likely already have on hand, this baked oatmeal is your perfect healthy breakfast.
To make this easy banana bread baked oatmeal recipe, you need ripe bananas, eggs, vanilla extract, almond milk, maple syrup, rolled oats (it’s important to use old-fashioned oats, NOT quick cooking oats), baking powder, cinnamon, salt, walnuts, and of course some chocolate chips! If you use certified gluten-free oats, this recipe is gluten free, and if you use dairy-free chocolate chips it is dairy-free as well! This recipe is not vegan because I use eggs and while I haven’t tested it, I do think that flax eggs will work as a vegan substitution.
Whether you want a cozy recipe to make on a weekend morning or need something quick and easy to make for a weekday breakfast, this baked oatmeal is perfect. Once it cools, you can easily cut it into squares to take on the go for breakfast or snack as well!
- 3 very ripe bananas
- 2 eggs
- 1 tsp. vanilla extract
- 1½ cups almond milk
- ⅓ cup pure maple syrup
- 2 cups rolled oats
- 2 tsp. baking powder
- 1 tsp. cinnamon
- ¼ tsp. salt
- ½ cup chopped walnuts
- ½ cup chocolate chips + more for topping if desired
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl, mash the bananas. Add eggs, vanilla extract, almond milk, and maple syrup and mix to combine.
- Add oats, baking powder, cinnamon, salt, walnuts, and chocolate chips and mix to combine.
- Spray a baking dish with nonstick cooking spray (I use an 8 x 10 baking dish but you can use any comparable size) and pour the batter into the pan. Top with additional chocolate chips if desired.
- Bake for 25-30 minutes or until the center of the oatmeal is set.
- Serve warm. Enjoy!
