I pick up fresh figs from a local farm stand, but some grocery stores carry them as well. Just remember that fresh figs do spoil quickly, so you’ll want to get the figs the same day you plan to make the salad.
You only need a few ingredients to make this arugula salad with figs and goat cheese: arugula, fresh figs, goat cheese, balsamic vinegar, good olive oil, and salt and pepper. That’s it! When you’re using fresh, quality ingredients, you don’t need much to make a delicious meal. Figs are in season now, so don’t let that pass you by without making this simple and light arugula salad. Figs also pair so well with balsamic vinegar, and the dressing for this salad is just balsamic vinegar, olive oil, salt, and freshly ground black pepper. Make this salad for lunch, for dinner, for anytime.

- 6 cups fresh arugula
- 1 pint fresh figs, halved or quartered
- 4 oz. goat cheese
- Balsamic vinegar
- Olive oil
- Salt
- Freshly ground black pepper
- In a large bowl, toss arugula with fresh figs.
- Top with crumbled goat cheese.
- Drizzle with balsamic vinegar and olive oil, then sprinkle with salt and freshly ground black pepper.
- Toss gently and enjoy immediately!
