Summer produce is just the best isn’t it? I picked up a huge box of fresh cherries a few weeks ago and knew I wanted to make something delicious with them. Even though there are endless ways to use cherries, these cherry white chocolate blondies are my new favorite recipe.
These are loaded with chopped cherries and white chocolate to make sure you get some in every bite. They are thick and delicious and the perfect summer dessert! I also won’t tell if you have one for breakfast. A blondie is really just one step beyond a muffin anyways right? And these would be excellent with a morning cup of coffee.
The key with these blondies is to let them cool completely before you slice into them. I know it’s tempting to want to enjoy them sooner! If you cut into them before they’re cool they will fall apart due to the massive amounts of cherries and white chocolate in them. They’ll still be delicious, but you just won’t have neat little squares.
If you really want to take this dessert to the next level, serve a blondie with a scoop of vanilla ice cream. There is truly nothing better!
- 1½ sticks unsalted butter, melted and cooled
- 1 cup packed dark brown sugar
- ½ cup granulated sugar
- 2 eggs
- 1 tsp. vanilla extract
- 2 cups all-purpose flour
- 1 tsp. baking powder
- ¼ tsp. salt
- 1 cup white chocolate chips
- 1½ cups chopped fresh cherries + more for topping if desired
- Preheat oven to 350 degrees Fahrenheit and spray a baking dish with nonstick cooking spray and line with parchment paper. The size of your dish depends on how thick you want your blondies. An 8x8 will give you very thick blondies, 9x13 will give thinner ones but more of them. I used an 8x11 dish.
- In a large bowl, whisk together butter, brown sugar, and granulated sugar. Add eggs, one at a time, whisking well after each addition. Add vanilla and whisk to combine.
- In a small bowl, whisk together flour, baking powder, and salt.
- Add dry ingredients to wet ingredients and mix to combine.
- Fold in white chocolate chips and cherries and spread in the prepared baking dish.
- Bake for 30-45 minutes until a toothpick inserted into the center comes out clean. If you're topping these with fresh halved cherries as shown in the pictures, push the cherries into the blondies as soon as they come out of the oven.
- Let blondies cool completely before removing from pan, slicing, and serving.
