White Chocolate Cherry Blondies

Ingredients
  • 1½ sticks unsalted butter, melted and cooled
  • 1 cup packed dark brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 cup white chocolate chips
  • 1½ cups chopped fresh cherries + more for topping if desired
Instructions
  1. Preheat oven to 350 degrees Fahrenheit and spray a baking dish with nonstick cooking spray and line with parchment paper. The size of your dish depends on how thick you want your blondies. An 8x8 will give you very thick blondies, 9x13 will give thinner ones but more of them. I used an 8x11 dish.
  2. In a large bowl, whisk together butter, brown sugar, and granulated sugar. Add eggs, one at a time, whisking well after each addition. Add vanilla and whisk to combine.
  3. In a small bowl, whisk together flour, baking powder, and salt.
  4. Add dry ingredients to wet ingredients and mix to combine.
  5. Fold in white chocolate chips and cherries and spread in the prepared baking dish.
  6. Bake for 30-45 minutes until a toothpick inserted into the center comes out clean. If you're topping these with fresh halved cherries as shown in the pictures, push the cherries into the blondies as soon as they come out of the oven.
  7. Let blondies cool completely before removing from pan, slicing, and serving.
  8. Enjoy!
