I almost feel a little silly sharing this “recipe” because it’s more like a non-recipe. It has three ingredients, which are all in the title, and two optional ingredients if your watermelon isn’t very sweet and you need to amp up the flavor a little bit. I’m sharing this recipe anyways because it’s very easy to be stuck in a recipe rut. Maybe you’re hosting for the Fourth of July and want an easy side dish but aren’t sure what to make. This watermelon, mint, and feta salad may be the easiest recipe I have on the blog, but the flavor combination is genius.
Watermelon and mint will forever be a good combination. Frozen watermelon blended with a little water and fresh mint from my garden is one of my favorite summer treats. Since Lleyton and I are the only ones in our family who like watermelon (for shame, I tell you), I find that when I buy a big watermelon I usually need to freeze a good portion of it because he and I can’t eat it all before it goes bad. For this recipe, however, I used a personal-sized watermelon from Costco. It’s the perfect amount of watermelon, and since they came in a package of two I have a second watermelon waiting to be cut up for the Fourth of July.
Watermelon is an interesting food in that it can be a bit polarizing and I find that a lot of people don’t care for it. I plan to eat it all summer long! Although I will note that when it comes to melon I would choose cantaloupe over watermelon, but I’m not picking. All the melon for me all summer please!
Whether you’re hosting for the Fourth of July or looking to bring a side dish to a BBQ that’s a step up from watermelon wedges, this salad is the one for you. Enjoy!
- 1 personal seedless watermelon, rind removed, cubed*
- 1 cup loosely packed fresh mint
- 4 oz. crumbled feta cheese
- 3 tbsp. honey (optional)
- 2 tbsp. apple cider vinegar (optional)
- Place the cubed watermelon in a large bowl.
- Slice mint into thin strips. I slice the mint the same way I slice basil: place the leaves on top of each other, roll them horizontally, and slice. Place the mint in the bowl and gently mix.
- Top with feta cheese and serve immediately.
- Optional ingredients: if your watermelon isn't as sweet as you were hoping it would be, mix together the honey and apple cider vinegar in a small bowl. Drizzle over the watermelon and gently toss. The sweet, sour, and acidic mixture adds an extra punch to the watermelon, but if you have a really sweet watermelon, you may just want to let that flavor shine.

Don’t feel silly sharing this 🙂 It is always nice to find simple recipes with only a couple ingredients. I planted mint this year and have been using it in many salads and recipes! I never put it in with watermelon yet tho. Sounds delicious.
