Watermelon, Mint, and Feta Salad

Ingredients
  • 1 personal seedless watermelon, rind removed, cubed*
  • 1 cup loosely packed fresh mint
  • 4 oz. crumbled feta cheese
  • 3 tbsp. honey (optional)
  • 2 tbsp. apple cider vinegar (optional)
Instructions
  1. Place the cubed watermelon in a large bowl.
  2. Slice mint into thin strips. I slice the mint the same way I slice basil: place the leaves on top of each other, roll them horizontally, and slice. Place the mint in the bowl and gently mix.
  3. Top with feta cheese and serve immediately.
  4. Optional ingredients: if your watermelon isn't as sweet as you were hoping it would be, mix together the honey and apple cider vinegar in a small bowl. Drizzle over the watermelon and gently toss. The sweet, sour, and acidic mixture adds an extra punch to the watermelon, but if you have a really sweet watermelon, you may just want to let that flavor shine.
Notes
*You can use 6-8 cups of any watermelon that you choose! Just watch out for seeds. One personal seedless watermelon gives you the perfect amount.
