For a lot of people, fall means the return of football. Afternoons and evenings are spend in the living room, cheering for your favorite team, and enjoying game day food. I’ll admit, I’m not a huge fan of football. As a West Point graduate, my school wasn’t exactly known for being an amazing team. I’ll cheer my heart out for the annual Army vs. Navy football game, but other than that I don’t follow any games. I love fall, and there are so many things to do other than watch football in the fall! Thankfully, games tend to be on in the afternoon and evening which keep our mornings free for fall activities. One football tradition that I can behind is game day food, like these turkey taco bites.
A good game day spread usually has chili, maybe some wings, and lots of dips and finger foods. These jalapeno popper wontons never last long when we host an at-home tailgate. And who doesn’t love crock pot BBQ meatballs since they are easy to prepare in advance? A jalapeno bacon cheese ball is sure to be a crowd pleaser, as are baked ranch pretzels. Summers are so beautiful in the Pacific Northwest, but I think fall has to be my favorite season. Growing up in the Midwest, fall finally brought a welcome respite from the hot and humid summer, and all the trees were beautiful. This fall is bringing another baby for us and is going to be such an exciting time!
I don’t know if I’ve every met anyone who doesn’t like tacos, and while serving a taco bar is a great idea for game day, these turkey taco bites are the perfect way to get all that taco taste in a perfectly portioned snack. Wonton wrappers are one of my favorite things to use for snacks. Pop them into a muffin tin and you can fill them with just about anything! They provide the crunch factor necessary for so many snacks, and are sturdy enough to hold all this taco flavor. I promise that they will disappear the next time you host a tailgate!
- 2 tbsp. oil
- 1 lb. ground turkey
- ½ tbsp. cumin
- 1 tsp. chili powder
- ½ tsp. garlic powder
- ½ tsp. onion powder
- ¼ tsp. ground black pepper
- ½ tsp. salt
- 12-18 wonton wrappers
- ¾ cup shredded cheese (I used a Mexican blend, but cheddar is also great)
- 1 cup shredded iceberg lettuce
- 2 roma tomatoes, chopped
- Sour cream, for topping
- Guacamole (optional), for topping
- Salsa (optional), for topping
- Preheat oven to 350 degrees Fahrenheit.
- Heat oil in a large pan and brown turkey, breaking into small pieces as it cooks.
- Add cumin, chili powder, garlic powder, onion powder, black pepper, and salt to the turkey. Stir to combine.
- Place the wonton wrappers in a muffin tin. Fill about halfway with turkey and then top with shredded cheese. This recipe makes 12-18 taco bites, so if you do not have two muffin tins you will need to work in batches.
- Bake for 10-15 minutes until cheese is melted and the edges of the wontons are golden brown.
- Top the taco bites with lettuce, tomatoes, and sour cream. Optional additional toppings include salsa and sour cream, or even a slice of jalapeno if you're looking for extra heat.
- Serve immediately. Enjoy!
