Turkey meatballs are a standard in our house. I make them in a curry sauce, in a chicken parmesan meatball bake, and in these spinach and turkey meatballs. I do this for several reasons. First, ground turkey is relatively inexpensive, which means I can make a double batch of this easy meatball recipe and freeze half for later. Second, I love that I can pack a whole 120z. back of frozen spinach into these meatballs! My kids aren’t going to be eating a spinach salad, so unless they get their spinach in a smoothie or in these meatballs, they’re probably not eating it. These meatballs are delicious and fresh, perfect for a weeknight meal over some pasta, tossed in marinara sauce, or dipped in ketchup if you’re a kid like mine.
I served these with creamy parmesan orzo pasta and it was the perfect combination. With some freshly ground pepper on top and extra parmesan, it made for the perfect weeknight meal. I highly recommend baking a double batch so you can freeze some for later! They’re great to defrost for a quick lunch or dinner when you don’t have time to cook. These meatballs are tender and moist thanks to the addition of olive oil and an egg to the meatball mixture. Ground turkey can be a little bit dry and the oil and eggs add moisture and flavor to the meatballs.
You just can’t beat a delicious turkey meatball! And with the extra veggies thanks to the spinach addition, these spinach and turkey meatballs just can’t be beat. For a budget-friendly meal that everyone will love, add this easy meatball recipe to your meal plan.
