My favorite dessert is ice cream. Any time we are in a new place, I have to find the ice cream shop. It’s my treat of choice when we’re home, and my go-to flavor is moose tracks. That is, until I had this s’mores ice cream. Because my favorite part about camping is s’mores. Combining s’mores and ice cream into one delicious treat is genius! Even though it’s Labor Day weekend, there’s plenty of summer left to enjoy this s’mores ice cream.
I will be honest, this may be my new favorite ice cream flavor. Generally when I have ice cream, I want there to be some chocolate in it with a few exceptions. But when Kevin has ice cream, he doesn’t want there to be a lot of chocolate in it and prefers either a vanilla or fruit base. Ice cream flavors like this are the perfect compromise. The vanilla-marshmallow base of this one is perfection, and the bits of chocolate and graham cracker in every bite brings it to the next level.
Sometimes when you make homemade ice cream and let it set in the freezer, it almost gets too solid and becomes icey. The marshmallow fluff in the ice cream base keeps that from happening in this s’mores ice cream! It keeps it nice and fluffy and smooth. Really, it makes it perfect.
Summer may be over in a few weeks, but I plan to enjoy this ice cream all year long. Every season is ice cream season! And if you’re looking to score some cool points with your kids, this is the way. The day I made this ice cream, I served it to 6 kids as their afternoon snack and all of them approved.
- 1½ cups heavy cream
- ½ cup whole milk
- ½ cup granulated sugar
- Pinch of salt
- 7 oz. container of marshmallow fluff
- 8 graham crackers, crumbled
- 4 oz. chocolate of choice, cut into pieces
- In a medium bowl, whisk together cream, milk, sugar, salt, and marshmallow fluff. Refrigerate for at least 2 hours, ideally overnight. Ensure that the bowl of your ice cream maker is frozen and ready to make ice cream.
- After the mixture has chilled and the ice cream bowl is frozen, pour into the ice cream bowl and turn on your ice cream maker as directed. Use a spatula to push down the marshmallow fluff. As the ice cream maker works its magic, the fluff will become smoother and blend into the ice cream.
- Add graham cracker crumbs and chocolate chunks while the ice cream maker is on and mix until combined.
- Pour mixture into a loaf pan and freeze until your desired consistency is reached.
- Scoop and enjoy!

Hi I am making this now and wonder what you consider a graham cracker. There are sheets of graham crackers with 8 pieces. Do you mean just one sheet of 8 or ???

Actually they are in sheets of four. Is the four considered ONE graham cracker for this recipe?

We may have different sized graham crackers! For me, a sheet is a rectangle with two squares. If I was making s’more, I would use one sheet of graham crackers, broken in half if that makes sense! I’m going to go back and update the recipe to specify an actual amount of graham cracker crumbles, but it should be about a cup to a cup and a half.
