Summer is coming to a close, but you can enjoy these salted caramel s’mores blondies without a campfire! These easy cookie bars have all your favorite s’mores ingredients: chocolate, graham crackers, and marshmallows. But with a twist, they also have salted caramel chocolate squares pushed into the top and are sprinkled with sea salt after baking. If you don’t have salted caramel bars, you can definitely add extra chocolate chips on top, but the sprinkle of sea salt on top is really a must to take these s’more bars over the edge.
Picture if a gooey s’mores and a chocolate chip cookie came together to make one perfect dessert–that’s exactly what these s’mores blondies are! They are great as is, but warmed up with a scoop of vanilla ice cream on top makes for an extra decadent treat. They are the best kind of cookie bar to enjoy all year. Whenever we are invited to a friend’s house for dinner, I frequently volunteer to bring dessert. You better believe that this is my new go-to dessert recipe to share with friends!
These s’mores blondies are perfect for anyone. I tend to like a chocolatey dessert, but my husband gets overwhelmed by anything too rich. But who doesn’t like s’mores? Or a chocolate chip cookie? You truly can’t go wrong with this dessert. And as a bonus, they freeze really well, meaning that you can enjoy that s’mores craving anytime. Just heat them up in the microwave or let thaw on the counter for a single-serving treat.
- 1 cup butter, melted and cooled
- 1½ cups granulated sugar
- 2 eggs
- 2 tsp. vanilla extract
- 2 cups flour
- ½ tsp. baking powder
- ¼ tsp. salt
- ¾ cup chocolate chips
- ¾ cup mini marshmallows
- 6 graham cracker sheets, crumbled
- Salted caramel chocolate squares for topping (or more chocolate chips)
- Flakey sea salt for topping
- Preheat oven to 350 degrees Fahrenheit. Spray a 9 x 13 or 8 x 12 baking dish with nonstick cooking spray and line with parchment paper for easy removal.
- In a large bowl, whisk together butter, sugar, eggs, and vanilla until very smooth.
- Add in flour, baking powder, and salt and mix to combine.
- Add chocolate chips, marshmallows, and graham crackers and mix to combine.
- Press the batter into your prepared pan. Break up a few salted caramel chocolate squares to gently press into the top, or add more chocolate chips.
- Bake for 20-25 minutes until a toothpick inserted into the center comes out clean. They will still be a little gooey!
- Sprinkle with sea salt after removing from the oven. Let cool before removing the blondies from the pan, cutting, and serving.
