Hands down my favorite part of camping is s’mores. I wish we had an outdoor fire pit specifically so we could make s’mores because they are the best. And since Rice Krispie treats are another significantly underrated easy dessert, I decided to put the two desserts together to make Golden Graham s’mores bars. The classic Golden Grahams cereal from your childhood is really the perfect ingredient for these easy, no-bake bars.
While I do think these are the perfect treat for a summer BBQ, I’m sharing them now because they’re an easy dessert to make at home without using flour, sugar, or eggs: ingredients that can be hard to come by right now. And yet with quarantine right now, everyone certainly deserves a sweet treat. I hope you’re all hanging in there; it’s a challenging and scary time for everyone. I find that it helps to take this day by day and I’m so thankful for social media and the internet to both feel connected with others and be inspired with ideas for indoor activities with my kids.
These Golden Graham S’mores Bars are the perfect treat to enjoy now and to make again and again this summer. Since they’re so easy to make and use just 5 ingredients, they’re also a great recipe to make with your kids while you’re staying home.
- 4 tbsp. butter
- 12 oz. marshmallows
- 6 cups Golden Grahams cereal
- ½ tbsp. coconut oil
- 1 heaping cup chocolate chips
- Spray a 9 x 13 baking dish with nonstick cooking spray and line with parchment paper with some hanging over the edges for easy removal.
- In a large pot, melt butter. Reduce heat to low and add marshmallows, stirring to melt. Add =Golden Grahams cereal and stir to combine.
- Transfer the mixture to the prepared baking dish. Use a spatula sprayed with nonstick cooking spray (or your hands rubbed with oil), to press the mixture down. Let sit until fully cooled.
- Melt coconut oil and chocolate chips. You can use a double boiler or the microwave in 30 second increments, stirring the chocolate after each 30 seconds.
- Pour the chocolate over the bars and let sit until the chocolate is hardened. You can also refrigerate them to speed up the process.
- Remove the bars from the dish, slice, and serve.
