One holiday treat that you see on many tables is panettone, an Italian sweet bread. It’s delicious all by itself but turned into a salted caramel bread pudding it’s absolutely irresistible. I love bread pudding because it’s so easy to make and such a crowd-pleaser. Sprinkled with powdered sugar and drizzled with plenty of salted caramel, I like to serve it with a big scoop of vanilla ice cream for a dessert that hits just right. The flavors in the panettone are already perfect for the holidays, but adding in warm spices like cinnamon, nutmeg, ginger, and cloves make it even more festive.
How to Make Panettone Bread Pudding:
- First, cube up the entire loaf of panettone and place it in a large baking dish. Sneak a bite or two for yourself, I know you want to.
- Next, whisk together your milk, eggs, spices, extracts, and sugars. The spices are so warm and will remind you of a pumpkin bread or gingerbread with their flavors. We’re also using both brown sugar and granulated sugar for sweetness and to give a perfect caramelized flavor. Vanilla extract is essential in just about every baked good, but a hint of almond extract gives the perfect nuttiness to the dish. Almond extract is my secret weapon ingredient in many baked goods. It takes them from “this is good,” to “wow this is amazing.” Pour over the baking dish and mix to combine.
- Bake in the oven until the bread pudding is fully set, then top with powdered sugar and salted caramel. Serve warm with vanilla ice cream.

- 2 cups whole milk
- 3 eggs
- 2 tsp. vanilla extract
- 1 tsp. almond extract
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- ½ tsp. ginger
- ¼ tsp. ground cloves
- ¼ cup packed dark brown sugar
- ½ cup granulated sugar
- 8 cups cubed panettone bread (from one large loaf)
- Salted caramel and powdered sugar for topping
- Preheat oven to 350 degrees Fahrenheit.
- In a medium bowl, whisk together milk, eggs, vanilla extract, almond extract, cinnamon, nutmeg, ginger, cloves, brown sugar, and granulated sugar. Set aside.
- Place the cubed bread into a 9 x 13 baking dish. Pour the milk and egg mixture over the bread and stir to combine. Bake for 35-40 minutes until the center of the dish puffs up slightly. That lets you know that the eggs are fully cooked!
- Dust with powdered sugar and drizzle with salted caramel. Serve warm with vanilla ice cream.
