I know that rose season isn’t an official season, but let’s all agree that it should start in May. The weather is getting warmer, and a crisp glass of rose is perfect. For a an extra special treat, a rose sorbet float is even better. You only need two ingredients: a sparkling rose and your favorite sorbet flavor. To get the pretty photos, I used strawberry, mango, and lemon sorbets. But honestly, all sorbet flavors would be delicious with this!

For Mother’s Day we brought you this strawberry frose, and now these gorgeous, easy, refreshing rose sorbet floats. It’s amazing how something so simple can be so refreshing and feel so fancy.
Jen has some great advice on selecting a wine for these floats. If you’re going to make a proper float, you have to use some bubbly! As with root beer floats or coke floats, the balance of the carbonation and the cold ice cream or sorbet is truly incredible! So now that we’ve accepted that as fact, we have some options! There are four predominate types of bubbly: Champagne, Cava, Prosecco, and Sparkling Wine. When wine is very cold, it loses many of it’s aromas and flavors, so you definitely don’t want to use anything expensive like a Champagne. I would advocate for a Cava or Sparkling Wine – both have a strong power behind their effervescence. For this recipe, I advised Claire on a Sparkling Rosé – you’ll get a powerful effervescence from a Sparkling Wine and a nice contribution of pink color! This Gruet Brut Rosé is easy to find at most liquor and wine shops and retails for around $15 per bottle.
- Sparkling Rose
- Sorbet (I've used strawberry, mango, and lemon)
- Scoop sorbet into glasses and top with rose. That's it! Easy, refreshing, and delicious.
