Pork tenderloin is one of my favorite easy dinner options. With their size, they cook in about 20 minutes and stay juicy and flavorful. Something forgiving and quick like this is perfect for a weeknight but also delicious enough to serve guests. I like to throw some asparagus on the sheet pan with the pork and top it all with a tasty apricot chutney. The apricot chutney is simple and uses dried apricots, boiled with apple cider vinegar, honey, and lemon juice. The sweetness of it compliments the pork so well!
The pork tenderloin has a simple seasoning blend. Just salt, pepper, garlic powder, onion powder, and smoked paprika. Rub it all with olive oil and you’re done! It doesn’t get much easier than that. This dinner may look fancy in the pictures, but it couldn’t be easier to make. I want to put this apricot chutney on just about everything because it’s so easy to make! It would also be delicious with any grilled protein. It’s completely up to you if you want to add asparagus to the pork on the sheet pan, but I think it helps round out the meal, and who doesn’t love a sheet pan dinner?
No matter what the occasion or day of the week, this pork tenderloin with apricot chutney is perfect!
- 2 pork tenderloins
- 1 tsp. salt
- ½ tsp. black pepper
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 2 tsp. smoked paprika
- 2 tbsp. olive oil
- 6 oz. dried apricots, chopped
- ⅓ cup apple cider vinegar
- 5 tbsp. honey
- Juice of ½ lemon
- 1 lb. asparagus, ends removed, cut into 3 inch pieces (optional)
- Preheat oven to 425 degrees Fahrenheit. Season the pork tenderloin with salt, pepper, garlic powder, onion powder, and smoked paprika. Rub all over with olive oil and place on a rimmed baking sheet and surround with asparagus. Bake for 20-25 minutes, flipping halfway. Pork is done when the internal temperature reaches 165 degrees Fahrenheit.
- While the pork is cooking, make the apricot chutney. Place the apricots, apple cider vinegar, honey, and lemon juice in a small saucepan on the stove and simmer for 15 minutes.
- Serve the pork with the apricot chutney over it.
