Summer is coming, which means you need some side dish options that hold up well for cookouts and BBQs. Cole slaw is an obvious choice, and while I do love that option, this spicy cashew crunch salad kicks things up a notch. It's spicy peanut dressing will have you licking your fingers, and the fact that this salad is cabbage-based means that it can hold up to being dressed in advance. Really, what more do you want in a summer dish? It's also a perfect lunch, with or without the addition of ... continue reading...

Quinoa Tabbouleh Salad
Some of you may have seen the title of this recipe and had no idea what type of dish this is. Is it a salad? A side dish? A main course? The truth is, tabbouleh can be all three. This Middle Eastern dish is one of our favorites to enjoy for lunch, but we also love it as a side dish or salad in the summer with some grilled meat for a simple dinner. Traditional tabbouleh uses bulgur as a grain, or occasionally couscous, but I like using quinoa because it packs a protein punch and makes it a ... continue reading...
Rainbow Chopped Salad
This salad came together in after a highly necessary crisper clean-out. When I go grocery shopping, I have a list and try to stick to it, but in the summer with the abundance of fresh produce I find myself adding lots of extra vegetables to my shopping cart. There are worse problems to have, am I right? But as I looked through the refrigerator prior to going out of town for ten days, I knew I needed to make quick work of using up a lot of ingredients. Thankfully, salads are a trend that ... continue reading...
Quinoa Elote
Have you heard of elote? It's Mexican street corn and is a delicious mess to eat. When I first heard what the ingredients were I wasn't sure it would be something I was interested in. Mayonnaise and chili powder? But let me tell you, it's so good. When we're enjoying dinner as a family, it means Kevin and I try to eat bites in between making sure Lleyton eats his dinner and feeding Easton, so corn on the cob is a bit of a hassle. But this! This can be eaten with a fork with one hand, ... continue reading...
Thai Kale Salad with Quinoa
I haven't always been a big fan of kale in salads. It's very tough, and sometimes bitter, and ultimately eating the salad just feels a little "too healthy" and tastes a little bit sad. But not this salad! The key is to take some of the dressing and massage it into the kale before adding the other vegetables. It softens the kale and takes out the bitterness. Kevin and I both had seconds of this salad for dinner. The dressing in this Thai kale salad with quinoa is packed with flavorful ingredients ... continue reading...
