Thanksgiving is the holiday that’s all about pies, and to me Christmas demands a chocolate dessert. That makes this Nutella French silk pie perfect for this time of year! I love eating pies, but I do not love making them because my pie crust never turns out as well as I want it to. For this pie, we are using a graham cracker crust and a springform pan to make this pie deep dish and filled with deliciousness. The creamiest, most chocolatey Nutella filling topped with homemade whipped cream is perfectly paired with a graham cracker crust. No matter what occasion you make it for, this dessert will be a hit. It does require a few steps, a few dishes, and a little work, but it’s truly worth it.
How to Make Nutella French Silk Pie
The first step you’ll take is spraying your springform pan with nonstick cooking spray and pressing a simple graham cracker crust into it, just graham crackers and melted butter! Set this in the refrigerator while you work on the rest of the filling. Using a stand mixer or a hand mixer, whip together the heavy cream and vanilla extract and set in the refrigerator while you make the other filling components. For the next two filling components, you’re going to use a double boiler. I don’t have a double boiler, but what you’re going to use is a heat proof bowl over a saucepan of water. You will actually use two different bowls over the double boiler, so take two of them and place them each over the saucepan you plan to use and make sure they fit fairly securely and leave a few inches of space between the bottom of the bowl and the bottom of the pan to ensure they won’t come into contact with the boiling water. Put a few inches of water in the bottom of the saucepan and the first bowl you plan to use on top.
In the first bowl, melt together the Nutella and dark chocolate, whisking frequently. Once it’s melted, set aside. In a separate bowl, which you need to be pretty large, whisk the egg yolks and sugar together constantly. If you’re not constantly whisking, you will end up with scrambled eggs. Then drizzle in the heavy cream while whisking constantly. Then add the chocolate mixture, also while whisking. Finally, remove the mixture from heat and fold in the vanilla whipped cream. Pour the batter into the prepared graham cracker crust and refrigerate for at least 8 hours, ideally overnight.
When ready to serve, topped with fresh whipped cream and chocolate shavings. Carefully remove the edges of the springform pan and cut with a hot knife to make your slices nice and clean. Enjoy every last bite of this Nutella French silk pie!
- 1½ cups heavy cream
- 1 tsp. vanilla extract
- 12 oz. Nutella
- 6 oz. very dark chocolate, chopped
- 4 egg yolks
- ½ cup granulated sugar
- ½ cup melted butter
- 14 sheets of graham crackers
- 1 cup whipping cream
- ¼ cup granulated sugar
- Chocolate shavings
- In a small bowl, make the graham cracker crust. Use a food processor to crush the graham crackers and crush the crackers into small crumbs. Place the crumbs into a bowl and add the melted butter. Mix until combined. Spray a springform pan with nonstick cooking spray and press the graham cracker crust into the pan. Use the bottom of a measuring cup to press the crust down. Refrigerate the crust until ready to use.
- Using a stand mixer or a large bowl and a hand mixer, beat together one cup of the heavy cream and the vanilla extract until stiff peaks form. Refrigerate while you make the rest of the filling.
- Using a double boiler and a medium, bowl, melt together the Nutella and the dark chocolate, whisking frequently. Set aside until ready to use.
- Place a larger bowl over the double boiler and add the egg yolks and sugar, whisking constantly to temper the eggs. While constantly whisking, drizzle in the remaining ½ cup of heavy cream. Remove from heat and add the chocolate mixture to the eggs, also while whisking constantly.
- Take the whipped cream from the refrigerator and fold the whipped cream into the chocolate mixture.
- Pour the batter into the prepared crust and refrigerate for at least 8 hours or overnight.
- When ready to serve, whip together the whipping cream and sugar until stiff peaks form. Spread over the Frech silk pie and top with chocolate shavings.
- Use a hot knife to make clean slices and serve! Enjoy!
