One of my favorite things is homemade granola and plain Greek yogurt with some fruit. It’s so simple to make and to customize that my kids can make it relatively unsupervised. One of them mixed the wet ingredients while another one mixed the dry ingredients, and then they watch as it cooked in the oven. Normally a batch of granola will get me through a week of breakfasts, but the kids have loved this maple almond granola so much that it only made it a few days! The ingredients used in this recipe are simple, but sometimes simple is best and gives you great flavor! Real maple syrup, cinnamon, vanilla, and coconut oil make up your wet ingredients. Old fashioned oats, flaxseed meal, a little salt, and almonds make up your dry ingredients. That’s all you need to make this delicious and easy granola recipe!
The key to those big crunchy granola clusters is to let the granola cool fully on the pan before you break it into pieces. Too much stirring as it bakes, or stirring it as soon as it comes out of the oven will break those clusters up. Your granola will still be delicious, but who doesn’t love those big bunches of oats and almonds? It also helps to use coconut oil as your oil component in the granola. The subtle nutty, coconut flavor gives the granola the perfect flavor, and since coconut oil is a solid at room temperature it may help you get a crunchier granola with bigger oat clusters. If you have to substitute with another oil you can, but the coconut oil really makes this granola top notch.

- 4 cups rolled oats
- 1 cup raw almonds
- 4 tbsp. flaxseed meal
- ½ cup melted and cooled coconut oil
- ½ cup pure maple syrup
- 1 tsp. vanilla
- ½ tsp. salt
- 1 tsp. cinnamon
- Preheat oven to 350 degrees Fahrenheit and line a rimmed baking sheet with parchment paper.
- In a large bowl, combine oats, almonds, and flaxseed meal.
- In a small bowl, whisk together coconut oil, maple syrup, vanilla, salt, and cinnamon.
- Add wet ingredients to dry ingredients and mix to combine.
- Pour the mixture onto the prepared pan and spread to form an even layer.
- Bake for 25-30 minutes until golden brown. Allow to cool completely before breaking into granola clusters.
- Store in an airtight container for up to one week.

I added 4 Tbsp Chia Seed amd 4 Tbsp Hemp Hearts because… why not? This smells so good while baking!
