Cocktails are one of my favorite things to make and photograph. Something fun to sip on to commemorate a special occasion or any day, whether it’s a cocktail or a mocktail, is just a delicious option. Now that I’m not pregnant anymore, I immediately wanted to create a cocktail that I’ve been dreaming of since last summer. I had something similar to this at a local restaurant and loved how fruity and floral it was. With notes of grapefruit, peach, lime, and lavender, I had a hard time thinking of a name but after crowdsourcing to Instagram settled on the lavender haze cocktail.
The first ingredient you’ll need to make for this cocktail is the lavender simple syrup. I am not sure if you can buy it pre-made except at specialty stores, but it’s easy to make. Combine one cup of water, one cup of sugar, and 1/3 cup of dried culinary lavender in a saucepan and bring to a boil. Then reduce to a simmer for about 20 minutes and let cool completely before straining the lavender from the syrup. You only need 1/2 an ounce of lavender simple syrup for a drink, but I love putting the extra lavender syrup in tea and you could even make a homemade lavender latte at home. I haven’t tried it, but using the lavender simple syrup to make a lavender lemonade would also be delicious!
Once the simple syrup is made, combine the remaining ingredients in a shaker bottle. If you’re making this in a pitcher, you can add the larger quantities listed below to a pitcher and serve the cocktails over ice. I have instructions below for both a single drink and a pitcher, which makes four drinks, so choose what is best for you! If you want a fancy touch to your glasses, finely chop some culinary lavender and mix with sugar. Rim your glasses with lime juice and dip in the lavender sugar for a fun sugared rim.
This lavender haze cocktail is a drink worth making! It’s the prettiest color and so refreshing.
- 2 oz. grapefruit vodka
- 1 oz. peach schnapps
- ½ lime, juiced
- ½ oz. lavender simple syrup (recipe below)
- 3 oz. grapefruit sparkling water
- 8 oz. grapefruit vodka
- 4 oz. peach schnapps
- 2 limes, juiced
- 2 oz. lavender simple syrup (recipe below)
- 1 can grapefruit sparkling water
- 1 cup water
- 1 cup granulated sugar
- ⅓ cup dried culinary lavender
- Lime wedges
- Chopped or ground dried culinary lavender
- Granulated sugar
- Prepare your simple syrup. In a small saucepan, combine one cup of water, one cup of granulated sugar, and ⅓ cup dried culinary lavender. Bring to a boil then reduce to a simmer for 20 minutes. Let cool completely before straining the lavender from the syrup.
- To prepare the glasses, combine the ground or chopped dried lavender with granulated sugar on a plate. Rim your glasses with lime juice from a lime wedge and invert into the lavender sugar.
- For a single drink, combine grapefruit vodka, peach schnapps, lime juice, and simple syrup in a shaker with ice. Serve over ice in prepared glasses and top with grapefruit sparkling water.
- For a pitcher, combine grapefruit vodka, peach schnapps, lime juice, and simple syrup in a pitcher. Stir to combine, then add grapefruit sparkling water and gently stir to combine. Serve over ice in prepared glasses.
