When it comes to St. Patrick’s Day, one of my favorite things about the holiday is enjoying Irish soda bread for breakfast the following day. I toast it, slather it with butter, and sometimes sprinkle a little sea salt on it or coarse sugar, depending on my mood. This year I’m skipping the middle man and just making Irish soda bread muffins to enjoy for breakfast!
I’ve always loved St. Patrick’s Day even though I have barely any Irish in me. I grew up in Chicago and the holiday is a big deal there; they even dye the Chicago River green! We grew up eating corned beef and cabbage and Irish soda bread for dinner and it was always delicious.
These muffins have just a little bit of cinnamon and cardamom in them because I had a version of Irish soda bread once with those spices and I absolutely loved it, and I’m sure you will too.
Speaking of love, another reason that this holiday is special is because it’s actually the day that Kevin proposed! This year will mark 7 years since we got engaged. It was such a busy time in our lives: I was living in Washington state, Kevin was living in Atlanta. He had just returned from his deployment to Afghanistan a few months before, and I had just found out that week that I would be leaving before the end of the year. It was a short engagement, and here we are seven years and three kids later! What a wild ride.
Even if you don’t have any traditions for St. Patrick’s Day, I hope that these Irish soda bread muffins become one. I used chocolate chips in these because it makes them a sweet breakfast treat, but you could easily substitute raisins or leave them out to serve it with your corned beef and cabbage. Or your dinner can be a festive recipe that I’ll have on the blog on Friday!
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 4 tbsp. sugar
- 1 tsp. salt
- ¼ tsp. cinnamon
- ¼ tsp. cardamom
- 1 egg
- 1 cup buttermilk
- ¾ cup chocolate chips or raisins (optional)
- Preheat oven to 350 degrees Fahrenheit and spray a muffin tin with nonstick cooking spray.
- In a medium bowl, whisk together flour, baking soda, sugar, salt, cinnamon, and cardamom.
- In a large bowl, whisk together egg and buttermilk.
- Add dry ingredients to wet ingredients and mix until just combined.
- Fold in the chocolate chips or raisins, if using.
- Divide batter between 10 muffin cups in the muffin tin.
- Bake for 20-22 minutes until a toothpick inserted into the center comes out clean.
