Irish Soda Bread Muffins

Ingredients
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 4 tbsp. sugar
  • 1 tsp. salt
  • ¼ tsp. cinnamon
  • ¼ tsp. cardamom
  • 1 egg
  • 1 cup buttermilk
  • ¾ cup chocolate chips or raisins (optional)
Instructions
  1. Preheat oven to 350 degrees Fahrenheit and spray a muffin tin with nonstick cooking spray.
  2. In a medium bowl, whisk together flour, baking soda, sugar, salt, cinnamon, and cardamom.
  3. In a large bowl, whisk together egg and buttermilk.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Fold in the chocolate chips or raisins, if using.
  6. Divide batter between 10 muffin cups in the muffin tin.
  7. Bake for 20-22 minutes until a toothpick inserted into the center comes out clean.
