Irish Soda Bread Muffins

Serves: 10 muffins
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 4 tbsp. sugar
- 1 tsp. salt
- ¼ tsp. cinnamon
- ¼ tsp. cardamom
- 1 egg
- 1 cup buttermilk
- ¾ cup chocolate chips or raisins (optional)
- Preheat oven to 350 degrees Fahrenheit and spray a muffin tin with nonstick cooking spray.
- In a medium bowl, whisk together flour, baking soda, sugar, salt, cinnamon, and cardamom.
- In a large bowl, whisk together egg and buttermilk.
- Add dry ingredients to wet ingredients and mix until just combined.
- Fold in the chocolate chips or raisins, if using.
- Divide batter between 10 muffin cups in the muffin tin.
- Bake for 20-22 minutes until a toothpick inserted into the center comes out clean.
